Nấm đông cô khô và rong biển ngâm 3 lít nước qua đêm thành nước daishi. Nấu một nồi nước sôi rồi cho thịt gà đã làm sạch vào để khoảng 3 giây cho ra sạch chất bẩn trong gà. Vớt gà ra, cho qua nồi nước dashi và nấu sôi. Vớt rong biển và nấm ra, cho rượu vang trắng vào, đảo đều và hầm với lửa nhỏ trong òng 4 tiếng.
Sau đó bạn lọc nước dùng qua rây để có ngay lọ nước trong, ngon. Cuối cùng chỉ việc bảo quản trong tủ lạnh và lấy ra nấu mì khi cần nhé, đảm bảo rất ngon đấy.
